Dufflet Gluten-Free line of desserts is finalist for SIAL Innovation Award!

Dufflet Pastries is proud to announce that it's new Gluten Free line is one of 10 product finalists for the 2013 SIAL Innovation Award!

The Dufflet line of packaged gluten-free products includes:
~ Carrot Cakelet®,
~ Chocolate Cakelet®,
~ Chocolate Chunk Brownie,
~ Chocolate Dipped Coconut Macaroon.

SIAL Canada is an international food and beverage trade show that takes place April 30 to May 2, 2013 at the Direct Energy Centre (Exhibition Place, Toronto). The show alternates annually between Montreal and Toronto and draws 14,000 professional visitors from 61 countries and 700 exhibitors over 230,000 sq/ft of exhibiting space.

Along with exhibits, demos and special events, SIAL also hosts 4 contests; Olive d'Or (best olive oil), Coffee Cup (best coffee), La Cuisine (best corporate chef) and SIAL Innovation (best international food innovation).

Dufflet Gluten Free is one of 10 finalists for the prestigious Innovation award - this is the process for judging;

Step 1: All participating products are carefully analyzed by an independent selection committee. Products showing innovative characteristics will be labelled “SIAL Innovation Selection.”

Step 2: Selected products are then presented to a jury of independent experts. This jury determines the 10 “SIAL Innovation Award” according to 4 criteria: market positioning, fabrication process, the recipe and packaging.

Step 3: Then the same jury selects amongst the 10 award winners the one who deserves the “SIAL Innovation Grand Award.”

blue velvet for father's day!

The weather is nice, so it's easy to forget the little things, like buying Dad something sweet for Father's Day (Sunday, June 19th). Good thing we're here with two obviously WONDERFUL suggestions!

Single-layer 6" Chocolate Fudge Cake - decorated for Father's Day with white chocolate bow tie and tuxedo buttons. 

Blue Velvet 3" Cupcakes - like our Pink Velvet cakes, this has yummy cocoa spice cake on the inside, and blueberry cream cheese icing on top!

Both are available at all 3 Dufflet cafe locations until Father's Day ... be sure to pre-order to avoid disappointment (they sell out fast, and I don't think it's just Dad's on the receiving end, right?)

charlie is one!!!

One of the best things about the business of making cake is FANMAIL (specially the kind that comes with pictures). Dufflet received this email yesterday, and it went viral in our office (so cute!) so I'm sharing part of it with you...


Dear Dufflet,

I ordered a Dufflet vegan chocolate cake for my daughter's 1st birthday as she is severely allergic to milk. We had 40 people over...and in the end what was supposed to be a small cake for people with allergies to dairy and eggs became the main attraction. I now know that I can always trust the Dufflet name to provide quality product and for allergies need not look further than your Beach location which is 2 minutes from my house.

Thanks again for helping make the day a success

Four layers of rich tasting vegan chocolate cake with no dairy nor eggs and made with spelt flour (which is not gluten-free but might be tolerated by some who are on a gluten-reduced plan).

Made with spelt flour (for those sensitive to gluten) Dufflet launches a delicious 4-layer Vegan Chocolate Cake which contains no eggs nor dairy in 2 sizes ... 9" (10-12 slices) and 6" (6-8 slices).

Available only at Dufflet's 3 cafes, be sure to order your Vegan Chocolate Cake at least a day in advance ... quantities are limited, and made-to-order tastes better anyway, right?

Good to know - Some people who are allergic to wheat may be able to tolerate spelt. Spelt has gluten, just like wheat, so spelt is not suitable for a gluten-free diet.

Ingredients: Water, Spelt Flour, Sugar Cane, Organic Icing Sugar, Non Hydrogenated Shortening, Canola Oil, Cocoa, Soya Milk, Vinegar, Natural Vanilla Extract, Salt, Baking Soda

international chocolate cake day tomorrow!



No one needs an excuse to enjoy Chocolate Cake, but this one's handy anyway! 


Let's start with a little history lesson, ok? - From Wikipedia: "The Duff Company of Pittsburgh (no relation to Dufflet!), a molasses manufacturer, introduced Devil's food chocolate cake mixes in the mid 1930s, but introduction was put on hold during World War II.

Duncan Hines introduced a Three Star Special (so called because a white yellow or chocolate cake could be made from the same mix) was introduced three years after cake mixes from General Mills and Duncan Hines, and took over 48 percent of the market."


In 1975 Dufflet Rosenberg began baking chocolate cakes for local cafes like Toronto's legendary Cow Cafe. All of her cakes are made from scratch with natural ingredients, not mixes, and contain no hydrogenated fats or oils nor artificial flavours, colours or preservatives.

father's day is no laughing matter


The movement to create a Father's Day began around 1908 and was lead by a woman who wanted to honour her widowed Dad raising 6 children.

Unfortunately, the American press chose to satirize the tribute to fatherhood, and Father's Day often tottered on the brink of disappearing completely. One argument was that if Father's were celebrated (like Mother's), then what would come next ... Maiden Aunt Days, Household Pet Days? The cynics had a field day!

Difficulties continued with the problem of gift-giving to celebrate Dad on his day. The sentimental items perfect for Mother's Day (flowers, cards and novelties) seem funny if given to Dad ... hence, the tradition of giving ties. Funny, odd-coloured ties that Dad would wear once and then hide in the back of a drawer for ever more.

Well, this Sunday (June 21), Father's in Toronto can relax. Dufflet has a little something for your sweet tooth that any son or daughter will be happy to give, and any Dad happy to enjoy!
